Usually when people that haven’t seen me in awhile they ask how I lost so much weight. I did address that in the post What Kelly Did, but the next question is usually “but what do you eat?”
So here’s an example of one of my 30 Smartpoint Days:
Breakfast
I have really, really strange hours. I get up at 3 am to start work at 5. So at home I always eat a hard boiled egg to get that metabolism running, and I also use Premier Protein (the chocolate) in my coffee.

Once I get to work and finish my morning reports I have my yogurt and blueberries. It is easy and I have my fridge at work all prepped for it. I usually bring enough for the whole week so that I don’t have to worry about being unprepared. Sometimes I make my own yogurt with fat free Greek yogurt and vanilla bean paste. If I’m running low on time I usually use Oikinos Triple Zero Vanilla yogurt with frozen wild blueberries from Costco.
Smartpoint Count: 4
Lunch
So my lunch is usually leftovers. Every once in awhile I’ll do a sandwich, but I find I am more satisfied if I have an actual meal. I cook a couple of meals on Sunday and portion them out for my lunches at work. I take them in on Monday, stock my fridge, and I’m set for the week.
Yesterday I had low point Tuna Casserole. I’ll post the recipe soon, because it is easy, from scratch, and low point!

I usually am gone 13 hours a day! This is tough and why I have to be so prepared. I usually have an afternoon snack so that I’m not starving on the way home, removing any temptation to stop somewhere and just get something.
One of my favorite snacks is just an apple and a Mini Babybell Cheese.
Smartpoints: 1
Dinner
Remember how I said I prepare a lot on Sundays? Well I made some taco meat with 96% lean Ground Beef. I had tacos Monday, so tonight I made a taco salad. Since I had a lot of points left I got to play around with my salad. I put 5 ounces of taco meat, tons of salad, Good Thins corn chips, onion, celery, carrots, cucumbers, tomatoes, and a delicious salad dressing made from 3 tablespoons of light sour cream and 1/4 cup salsa.
Smartpoints: 10
That leaves me with 4 Smartpoints for the day, so I had one of my Peanut Butter “Ice Cream” Sandwich Cookies for a snack.
There you have it – a 30 point day. At no point was I ever hungry, and was satisfied all day!
U really inspire me to eat healthier. I’ve tried but fell off. Not easy when u have a hubby likes to eat 😊 But I want us both healthy so seeing your blog really inspired me. Thanks Kelly! U look great!

How do you get your eggs cooked looking soft boiled without the green stuff around it.

I do 3 minute manual, then turn off, then 15 minute natural pressure release. Cold water then peel.
