I can’t believe we are heading towards the end of summer, and my attention is turning to more fall like recipes. This spicy sausage and potato soup is comfort food at it’s finest. It’s also incredibly easy and only 4 Smartpoints a cup!
This can either be cooked in the Instant Pot, or slow cooker.
Ingredients:
2 Pounds Red Potatoes, peeled and cut into bite size pieces)
1 Medium Onion, chopped
1 Pound Spicy Chicken Sausage (I use Trader Joe’s) Sliced
4 Banana Peppers, sliced in rings
3 Cups Chicken Bouillon (I use Wildtree), divided
1 Cup FF Milk
1/4 Cup Instant Mashed Potatoes
2 Tablespoons Flour
2 Teaspoons Minced Garlic
2 Teaspoons Salt
2 Teaspoons Black Pepper
Method of Preparation:
Instant Pot
Turn Instant Pot to saute mode and adjust to high. Add oil and once hot add sliced sausage, cooking about 3 minutes, stirring occasionally. Add onion and cook 1 more minute. Add minced garlic, salt and pepper and cook one minute more, stirring a few times.
Add two cups of bouillon, scraping the bottom to get any of the bits and pieces off. Add potatoes and peppers, turn off saute mode and add potatoes and peppers. Secure lid and set to manual for 10 minutes.
While the soup is cooking add 2 tablespoons of flour to one cup of bouillon. Whisk briskly until incorporated, and add milk. Whisk again until totally combined.
Once soup is done cooking do a quick release. Add bouillon/milk/flour mixture and stir well. Turn pot back to saute mode, and adjust to low. Cook for 5 minutes. stirring occasionally. Add instant mashed potatoes again and and mix well. Cook five more minutes and it’s done!
Slow Cooker
Follow same directions as Instant Pot, only brown your sausage, onions and minced garlic on the stove. Deglaze your pan with the bouillon and add to the slow cooker with other ingredients. Cook for 4 hours on high or 6 hours on low. Add flour/bouillon/milk mixture and instant potatoes at the end, turn pot on high, and cook 20 more minutes.
Be sure to check your sausage temperature and make sure it’s safe!
