Instant Pot Polenta?? Yes Please!

So I learned the love of Polenta when it was included as a no count food when I was doing the Core program with Weight Watchers back in the day.  It’s a complex carb and a great replacement for some of those starchy sides made up of simple carbs.

It takes on flavor wonderfully and you can really place around with herbs to find what you like.

Making it on the stove top can be tedious, but in the Instant Pot it’s a breeze!  The thing I love about it (besides the fact that it’s delicious!) is that you can mold it into shapes – it will hold any shape once it’s cool!

At 4 Smartpoints a 1/2 cup it is a filling, nutritious side.

 

Ingredients:

4 1/2 cups Chicken Broth
1/2 teaspoon Salt
2 teaspoons Wildtree California Style Garlic Pepper Blend
(or sub 2 minced garlic cloves and 1/2 teaspoon fresh ground pepper)
1 cups Corn Meal

Method of Preparation:

Put chicken broth, salt,, and California Style Garlic Pepper Blend (or your substitutes)  in the Instant Pot and turn it to saute.

Once it is hot enough to start bubbling, slowly add the Corn Meal and whisk away or it will get clumpy!  I’m serious, whisk your heart out!

Once all the Corn Meal is incorporated a give it a good stir, and place your lid on the Instant Pot.  Set to manual for 7 minutes.  Quick release (carefully, in spurts in case you have foamage happening)

You get creamy, garlicy Polenta.  So good.  So delicious!  Helpful tip:  remove from Instant Pot immediately and soak.  Mine did not burn, but did stick a bit on the bottom and if I wouldn’t have soaked it right away I probably would have had a hard time getting the bottom clean.  As it was it cleaned up like a champ!
