Spicy 3 Bean Chicken Stew

Hello fellow freestylers!  Are you excited about the new program?  I’m going to go more into my thoughts on in on the weekly weigh-in post, but I wanted to post this today to help all of you that need a fast and easy 0 Smartpoint dish!

Now I do have to warn you, the chicken broth has a point if you eat the whole thing.  I’d love the meet the person who could, because after eating just a bowl of this for lunch I could barely eat dinner.

It’s warm, filling, and definitely feels like comfort food!

Ingredients:

2 Cans Great Northern Beans, drained and rinsed
1 Can Black Beans, drained and rinsed
1 Can Kidney Beans(be sure to get the kind without sauce), drained and rinsed
1 Can Corn

1 Medium Yellow Onion, chopped
3 Celery stalks, diced

1 Tablespoon Crushed Red Pepper
1/2 Teaspoon Cumin
2 Teaspoons Chili Powder
2 Teaspoons Garlic Powder

3 Teaspoons Better than Bouillon Chicken base mixed with 3 cups water

1 1/2 Pounds Boneless Skinless Chicken Breasts, halfed if they are really large

Method of Preparation:

Instant Pot:
Turn Pot to Saute mode, spray with cooking spray, and saute onions and celery about a minute. Add beans, seasoning and broth.  Give it a good stir and place the chicken on top.

Turn the pot off, secure the lid, and put on manual mode for 8 minutes.  Naturally release for 15 minutes, and then release any remaining pressure.

Remove chicken breasts (do a temp check to make sure they reached a safe temperature.  I always do even though they never have not been unsafe.  I’m a freak) and shred.  Return to pot.

Slow Cooker:

Same as Instant Pot except no sauteing.  Dump everything into the pool and cook on high for 4 hours or low for 6 or until your chicken is shredding consistency.

I’ve tried this a couple of different ways.  This is a more “people in general” spice mix.  Making it just for me, and I LOVE spicy, I double my cumin and add an extra teaspoon of crushed red.

  2. What is the serving size? I just made this recipe and love it! Just curious on serving size. Even though it is zero, I’m careful about not eating too much. Thx!
