First things first: Is this risotto? Absolutely not, but it’s a pretty good substitute! I think the big trick to loving these low carb subs is to take them on in their own right as a new dish. I’m always experimenting with new side dishes, and this one is a winner!

Ingredients:

  • 5 cups frozen cauliflower rice
  • 1 cup mushrooms, sliced
  • 1 small onion, diced
  • 2 tsp garlic paste
  • 1 cup chicken broth
  • 4 ounce cream cheese, softened
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs like parsley for garnish

Greek-Style Baked Chicken with Herb Yogurt

I absolutely love this recipe! It does well with my blood sugar and keeps me satisfied for the rest of the night!

Ingredients (Serves 4)

For the Chicken

4 boneless, skinless chicken breasts
3 tablespoons olive oil
Juice of 1 lemon
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon salt
