So I’m a food prepper for sure – but sometimes things don’t work out and you have to use leftovers and other things on the fly to make sure you stay on program.
Breakfast – 7 Smartpoints
No matter how crazy my day or week is one thing is for sure – I always make sure I have grab and go breakfast. Growing up with parents who were from the south breakfast was an integral part of our culture. One did not simply skip breakfast. That was sacrilegious.
I have this Strawberry and Cream Overnight Oats recipe that is super good, but usually I go with a cup of plain, non-fat greek yogurt, 1/4 cups old fashioned oats, a dash of vanilla, a pinch of stevia, and whatever fruit I have on hand. I make 3 of these on Sunday nights (they’ll stay good for 3 days) and then have the rest of the week to make the other two for the work week.
When you use the plain non-fat Greek yogurt you get a whole cup of the yogurt and the whole thing is only 5 Smartpoints!
This is my favorite breakfast during the week because it keeps me full until lunch.
I also have to have my coffee and I use one bottle of Premier Protein (usually chocolate) as my creamer for 2 smartpoints.
Lunch – 9 Smartpoints
I’ll admit, unless it has more substance than this sandwiches are not my thing. I would much rather have leftovers any day of the week, but sometimes you gotta do what you gotta do.
The sandwich thin is 3 points, the ham is 1 point (and I didn’t even use all five slices!) the cheese is made with skim Kraft cheddar for 1 point, and I used light mayo for 1 point.
Skinny Pop is 3 points and I love it so much I have a case of it from Costco…lol

Snack – 2 Smartpoints
Hard boiled egg
Dinner – 11 Smartpoints
So this is leftovers from my Easy Chicken Egg Rolls recipe. I sometimes won’t shred all the chicken and chop it in chunks, and use the extra filling to make an Egg Roll Bowl if you will. I do a quick stir fry with 2 teaspoons of grapeseed oil, some salt, garlic powder and ginger. I keep these stir fry vegetables on hand from Costco at all times:
It has the perfect mix!
You can’t tell from the picture, but this also has a cup of brown rice. I try to make some of that at the beginning of each week just to have on hand. Here is my favorite brown rice Instant Pot recipe: Our Best Bites Brown Rice Recipe It comes out perfect every time!

Snack – 1 Smartpoint
Just some berries, which are in season right now and DELICIOUS topped with 2 tablespoons of fat free cool whip.
So I guess this wasn’t such a crazy day after all. I’m usually much more prepared than this, but then again I remember when a crazy day consisted of ordering pizza for lunch and eating a box of mac and cheese for dinner.
I’ll take this crazy any day of the week.
