When I first heard about overnight oats a few years ago I was skeptical. I mean how could they be good? Oats just sit in the fridge, chill out overnight, and come out good? Please.
One of the biggest secrets to my success so far is changing up what I eat. It’s really why I started this blog, along with the fact that the Weight Watchers social media site connect will only let you post from your phone and people were asking for my recipes. I have a bad habit of coming up with concoctions and then forgetting about them, hence the blog.
So this weekend I decided to throw my hat in the ring with this overnight oats thing. I’ll admit I had some disasters. There is a Facebook group that I love, Risa’s Recipes, and there were a couple of videos for overnight oats. It inspired me to do this.
Despite the disasters there was one that came out so delicious, so decadent that you could serve this for dessert to a non-dieter, and that’s saying something!
You also will not find an easier recipe around! Mix the ingredients, refrigerate overnight, and it’s done! At 7 Smartpoints it is a bit pricey, but well, well worth it!
Ingredients:
1/2 cup old fashioned oats (not the instant kind)
1/2 cup fat free cool whip
1/2 cup non-fat greek yogurt
1/2 cup cut up strawberries
1/4 tsp Vanilla Bean Paste (you can use regular vanilla extract, but Vanilla Bean Paste is so much better!
Method of Preparation:
Combined all ingredients.
Refrigerate.

Ok Kelly! Where do I find vanilla bean paste!!! I love overnight oats, but I’ve never tried strawberries! !!!!
