I can’t believe I haven’t posted this “recipe” before. It is simply what I eat every morning – like every single morning. I find it to be really filling and just plain delicious. I can make up five of them on Sunday night and I am good to go all week for work. This works for me because I find I’m not even a little hungry all morning, and it holds me well until lunch.

I usually get all my ingredients from Costco, but they are available everywhere! Recipe on page 2!

Lemon Blueberry Breakfast Cake

I love me some Blueberry and Lemon, and when I’m craving something sweet this is it for me!  You can make this in the oven or the Instant Pot and it’s super easy!  It is dense and very filling.

Ingredients:

3 Large Eggs
1 Cup Fage Non-Fat Greek Yogurt
2 Teaspoons Lemon Zest
1 1/2 Cup Flour
2 Teaspoons Baking Powder
1/2 Teaspoon Kosher Salt
1Cup Stevia Baking Blend (I use Aldi’s zero calorie)
1 1/2 Frozen Blueberries

Optional (for oven preparation) 1 beaten egg for egg wash

Strawberry and Cream Overnight Oats

When I first heard about overnight oats a few years ago I was skeptical.  I mean how could they be good?  Oats just sit in the fridge, chill out overnight, and come out good?  Please.

One of the biggest secrets to my success so far is changing up what I eat.  It’s really why I started this blog, along with the fact that the Weight Watchers social media site connect will only let you post from your phone and people were asking for my recipes.  I have a bad habit of coming up with concoctions and then forgetting about them, hence the blog.

So this weekend I decided to throw my hat in the ring with this overnight oats thing.  I’ll admit I had some disasters.  There is a Facebook group that I love, Risa’s Recipes, and there were a couple of videos for overnight oats. It inspired me to do this.

Despite the disasters there was one that came out so delicious, so decadent that you could serve this for dessert to a non-dieter, and that’s saying something!

You also will not find an easier recipe around!  Mix the ingredients, refrigerate overnight, and it’s done!  At 7 Smartpoints it is a bit pricey, but well, well worth it!
