Mom’s Veggie Soup

So this is a soup I grew up eating.  I’ve modified it slightly to make it more Smartpoint friendly, but it is easy, fast, and delicious!

I knew my Mom had a bad day when we had this because it was so easy to make.  In fact, I was probably the one making it after about 1st grade.  I’ve always cooked with my Mom, and this was the recipe that didn’t need much supervision, so when the bottle of wine came out and my Mom announced we were having this for dinner, I knew she had a hell of a day.

You can get 14 cups out of this recipe.  You can add more broth if you like it more juicy, or if you replace the bulgar with barley you will automatically get more broth.

It is 3 Smartpoints a cup or 5 Smartpoints for 2 cups.

Ingredients:

1 pound lean ground beef
1 Can Mixed Vegetables
2 Cans Green Beans
4 Cups shredded Cabbage (I buy the shreds coleslaw)
1 Bag frozen broccoli
1 Bag frozen Cauliflower
4 Cups Beef Broth
1 15 oz Can Tomato Sauce
2 oz dry Minced Onion (very important, gives lots of flavor)

1 Cup Bulgar Wheat
2 Teaspoons Garlic Salt
Salt and Pepper to taste

Method of Prep:

Okay so this is as easy as it gets.  Brown your ground beef, seasoned with the garlic salt and drain.  Put everything in a stock pot and cook bring to a boil.  Reduce to a simmer and cook for at least 20 minutes.

I like to add salt and pepper afterwards because depending on the broth it can get salty (for me), so after it’s been simmering for 20 minutes I give it a quick taste and season accordingly.

  1. You say “You can add more broth if you like it more juicy, or if you replace the bulgar with barley you will automatically get more broth.” I don’t see bulgar in the ingredients list though, how much do you use and does it affect the SP?

  2. I love bulgar! It has less SP than rice and it has a great flavor. I’m definitely going to try this soup, it sounds delicious!

    • 1 Cup noon fat greek yogurt, 1/4 cup old fashioned oats, 2 tablespoons PB2, one stevia. Mix and refrigerate overnight. I put frozen blueberries in about 10 minutes before I eat it!
