This recipe is super fast, super easy, and super delicious! It is so incredibly filing and just has that comfort food vibe without all those extra calories!
If you follow the WW Smartpoint plan it comes in at a whopping 2 points for 7 dumplings. Everything else in the recipe is zero Smartpoints!
These are the wontons I use for the recipe, and they can be found at Costco or Trader Joes. My local grocery store also carries them.
Ingredients:
1 1/2 Pound Chicken Breast
2 Cup Chopped Celery
2 Cup Carrot Sticks
1 Medium White Onion, diced
6 Cups Chicken Broth
1 1/2 Tablespoon Herbes De Provence Blend
2 Teaspoons Olive Oil
1 Teaspoon Salt
35 Chicken and Cilantro Mini Wontons
Method of Preparation:
Put Instant Pot in Saute mode and add oil. Add Celery, Carrots, and onions. Season with salt. Saute for 2-3 minutes, until onions become translucent, stirring occasionally.
Add Chicken Broth and Herbes De Provence Blend (you can find this at any grocery store in the seasoning aisle), stirring to get any stuck bits from the bottom. Gently place chicken on top of the liquid, close the lid, and set for 11 minutes Manual.
When finished let sit for 10 minutes and then do a quick release and remove chicken. Shred with two forks and place back in pot. Turn on saute mode and carefully add wontons one at a time until they are all in the pot. Gently stir and cool 3-5 minutes until fully heated.
