This is my spicy version of Jambalaya! Delicious and filling, it is one of my favorite new recipes!
If divided into 4 servings it is 7 WW Points. It is about a cup and a half per serving. You can make it into 5 one cup servings for 5 WW Points. It is very filling and the one cup version is a perfect lunch.
1 pound chicken, cut into 1 inch cubes
2 Jennie O Spicy Turkey Sausage Links sliced into chunks
1 yellow onion, diced
4 cloves garlic, chopped
1 can diced tomatoes
1 cup bulgur wheat (I like Bob Mills Red bulgur for this recipe)
1 Tablespoon Grape Seed Oil (Or other high smoke point oil)
1 3/4 cup chicken broth
1/2 teaspoon chili pepper
1/2 teaspoon oregano
1/8 teaspoon cayenne
1/8 teaspoon cumin
Method of Preparation:
Turn on Instant Pot to saute and add Turkey sausage once oil is sizzling. Stir occasionally, cooking for 3-4 minutes until browned.
Add chicken, onions, garlic and spices. Continue to cook 4 more minutes, or until onion is soft and translucent. Add diced tomatoes and bulgur. Poor chicken broth in and stir well until all bulgur is covered with liquid.
Turn Instant Pot off, secure lid being sure steam valve is turned off. Push manual and set for 10 minutes.
Once 10 minutes is up, turn pot off and let it naturally release pressure. Stir and serve!
