Weigh In 7-15-17: I’m one of THOSE People

So I got to weigh in this week despite my 2 week long no break from work.  I lost 3 pounds!

This puts me to the point in my weight loss that I only have to lose 5.4 pounds to be at a “healthy” weight.  Like not obese, not overweight, but HEALTHY.

This is my goal.  Sure I could probably lose a few vanity pounds after that, but I’m not to much worried about that.  This time around this whole journey has been about being the best I can be health wise, and it has made all the difference in the world.

People are always asking me “are you done?”  “do you really want to lose more weight?” so when a friend of mine asked me that this weekend and I replied “I want to lose about 5 more pounds” I totally understood her eye roll.

I remember being the heavier person that just wanted to smack the crap out of some skinny person that whined about wanting to lose 5 more pounds.  I don’t consider myself skinny at all, but it is still a little comical to have been on both sides of that fence.

Instant Pot Polenta?? Yes Please!

So I learned the love of Polenta when it was included as a no count food when I was doing the Core program with Weight Watchers back in the day.  It’s a complex carb and a great replacement for some of those starchy sides made up of simple carbs.

It takes on flavor wonderfully and you can really place around with herbs to find what you like.

Making it on the stove top can be tedious, but in the Instant Pot it’s a breeze!  The thing I love about it (besides the fact that it’s delicious!) is that you can mold it into shapes – it will hold any shape once it’s cool!

Weigh in 7/8/17 – Err Kind Of oh and Tools!

So I didn’t weigh in at my meeting this week – I was AWOL.  I’m in the middle of a 14 day stretch at work, so I had to miss my meeting.

I did weigh in at home, which is an event all unto itself.  You see my scale is a bit possessed.  It never ever ever matches what the scale says at my Weight Watchers meeting.  It is anywhere from a half of a pound under to almost a full pound.

So according to my scale at home I lost 2 pounds this week.  Taking into past consideration that could be anywhere from a half a pound to a pound and a half, so I’ll split the difference and say I lost a pound.

Which means I am 7 pounds to goal!  Wow.

I must say I was pretty impressed with myself and how far I’ve come.  It made me think about what is so different this time around?

Seriously, when I lost a ton of weight on Weight Watchers before….If I knew well in advance that I wouldn’t have to weigh in for two weeks…Well let’s just say it would have been a couple of day feeding frenzy followed by very strict under-eating of points for the rest of the time.

Food Find – Werther’s Original

So it’s no secret that I have a sweet tooth.  More like Teeth, like all of them are sweet.

Those sugar cravings are way less now, almost non-existent.  One of my secrets to staying on track is having these Werther’s Original Caramel Coffee sugar free candies on hand.

You get five of these babies for one Smartpoint!  One!

I try not to make it a habit, but when I’m having a really hard day these help big time.  It takes a long time to eat five of these, so I’ll spread them out through the day and have one whenever I’m really getting a craving for something that is outside my point range that day.

There have been a lot of people asking me “what did you do?” or “how did you do that??” since losing over 50 pounds.

Let me tell you it wasn’t easy, there was no magic pill involved.  I had to eat less calories than I was burning.

Sounds easy though, doesn’t it?  We’d all be thin if that was the case.  There’s that thing called life that gets in the way sometimes.

I’ve just come out to the other side of some bad, bad times.  My Grandma died.  my Grandpa died.  My Mom died.  My Dad died.  My cat and dog died.  All in about 4 years time.

What do you do with that much grief and tragedy at once?  You deal with it however you can.  You put one foot in front of the other until one day it doesn’t feel like you are pulling them out of concrete with each step.

Oh, and I seemed to have ate.  I mean I would eat, then I would not eat, but when I did eat, it was not good things.

I knew I needed to do something when this pic was posted on Facebook:

I didn’t realize it had gotten this bad until that moment.  Don’t you hate it when you go out thinking you look all cute and picture slaps you back to reality?  Funny thing about pulling your feet out of concrete.  You are so focused on that you don’t really notice anything else going on around you.

Strawberry and Cream Overnight Oats

When I first heard about overnight oats a few years ago I was skeptical.  I mean how could they be good?  Oats just sit in the fridge, chill out overnight, and come out good?  Please.

One of the biggest secrets to my success so far is changing up what I eat.  It’s really why I started this blog, along with the fact that the Weight Watchers social media site connect will only let you post from your phone and people were asking for my recipes.  I have a bad habit of coming up with concoctions and then forgetting about them, hence the blog.

So this weekend I decided to throw my hat in the ring with this overnight oats thing.  I’ll admit I had some disasters.  There is a Facebook group that I love, Risa’s Recipes, and there were a couple of videos for overnight oats. It inspired me to do this.

Despite the disasters there was one that came out so delicious, so decadent that you could serve this for dessert to a non-dieter, and that’s saying something!

You also will not find an easier recipe around!  Mix the ingredients, refrigerate overnight, and it’s done!  At 7 Smartpoints it is a bit pricey, but well, well worth it!

Tools – Apps and Plates

There are a lot of tools I have in my weight loss arsenal that help keep me on track.  Since I love love love cooking one of my favorites is the Copy Me That app.

Basically if you see a recipe you like you open it up in the Copy Me That browser and it will copy it in recipe form.  Even disorganized, jacked up recipes like I write for my page 🙂

You can add tags to find different types of recipes easily.  I like it better than say Pinterest for my recipe collections because there are no click click click to just get to the recipe already.

Just search Copy Me That at the Apple or Play Store.  It’s free !

Another tool I use sends me back in time.  Back to a time when the average American dinner plate was 9 inches.  My Mother was a dish hoarder.  Like every new color scheme that came out she had to have it.  She also saved them all, so when she passed and we were going through them I wondered why there were so many salad plates and no dinner plates.

That’s because the plates before the mid 80’s were the dinner plates, not the salad plates.  Compared to our plates now they look like salad plates.

Cooking Light has a really interesting article on this here if you’d like to read more.  I’ve swapped out my big honking Fiesta plates and use the salad plates that come with the set and it helps big time!

Weigh In 6/24/17 – 50 Pounds GONE

So I know I told you all I was going to Vegas and wanted enjoy myself and not worry so much about the Weight Watchers stuff.

Plans change.  My niece had an emergency appendectomy right before so we canceled.  We’ll get to go some other time, and the fact that she is doing well means we already won.

So I got to go to my meeting this weekend and low and behold I made my 50 pounds!  FIFTY POUNDS PEOPLE.

If you add in the weight I lost going back to the first time I did Weight Watchers (and never regained) I’ve lost 72 pounds total.  Wow.

I promise to put a progress pic up later in the week and I made an awesome, delicious pizza roll in my air fryer this weekend.  I forgot to get a pic so I guess I’m just going to have to make it again 🙂  Recipe coming soon!

Peanut Butter “Ice Cream” Sandwich Cookies

So every once in awhile I need something sweet…and creamy….and cold.  I decided to go in my way-back machine and pull out a recipe that made the rounds of Weight Watchers back when I did it the first time, the early 2000’s.

Basically you put cool whip between two graham crackers and froze it.  Trust me at the time this was about the best thing ever invented because it was like a point or two if I remember correctly.

Times and tastes change, and as I’ve gotten older a little frozen cool whip doesn’t exactly cut it, and those graham crackers are way more points then they used to be.

I’m also a peanut butter addict.  Did I ever tell you that?  I could sit and just eat peanut butter out of the jar.  I love it that much.

So I decided to replace the graham crackers with Pizzelle cookies, and Italian waffle cookie that is a bit more Smartpoint friendly.  They are also way better in my opinion.  And bigger…lol
